From Vietnam to McAlester, the long way around

Tam didn’t learn to cook in a culinary school. She learned at home in Vietnam, the way it’s been passed down for generations, by hand and by heart. Every dish on our menu started in that kitchen.

Where it began

Vietnam

Born and raised on the food she now cooks for y’all. Broken rice, phở, the works. Family recipes, no shortcuts, ever.

2014 to 2022

Eugene, Oregon

Tam opened her first food truck and ran it for eight years, cooking the same way every single day and building a following that hated to see her go.

2023 to today

McAlester, OK

Tam and Heath brought it all to Southeast Oklahoma. Y’all welcomed us like locals, and we’ve been cooking for you ever since.

Nothing we serve comes from a packet or a freezer. It comes from a family kitchen in Vietnam, by way of Oregon, straight to y’all.

The dish Tam grew up eating in Vietnam. Smaller grains, crispier texture, more surface area for flavor, served with shrimp, your choice of pork or chicken, crisp salad, pickled vegetables, cool cucumber, and a cup of fish sauce to tie it all together.

The broth

Real bones, simmered low and slow for hours before we ever open the window. No powder, no paste, no MSG. This is the part you can’t fake.

The noodles

Silky rice noodles, cooked when you order, never sitting in a warmer. They’re at their best for about ten minutes, so we make sure those minutes are yours.

The finish

Herbs, lime, jalapeno, and bean sprouts added right at the window, so everything lands in your bowl bright and crisp.

Phở sells out early most days. That’s not a sales trick, it’s just what happens when the pot runs dry.
